Creative Ways to Use that Leftover Fruitcake

Eating a DeLuxe® Fruitcake is one of the most enduring holiday traditions. However, once the holiday festivities come to a close, you may be wondering what to do with your leftover fruitcake. But don’t fret! We've created five creative and delicious ways to use that remaining fruitcake. 

Fruitcake Bread Pudding

Bread pudding made with DeLuxe® Fruitcake is one of the easiest recipes to make. Plus, it's so delicious, it'll disappear as soon as you put it on the table—yes, it’s that delicious. Here's how to make our Fruitcake Bread Pudding:

  • STEP 1: Cut your leftover fruitcake into bite-size pieces and arrange them into the bottom of a baking dish
  • STEP 2: Whisk together a splash of milk, a dash of sugar, and two large eggs in a bowl— pour this mixture over the fruitcake at the bottom of the baking dish
  • STEP 3: Cover your baking dish and place your fruitcake mixture into the fridge for three to four hours
  • STEP 4: Preheat your oven to 350 degrees and bake your mixture for 30 minutes or until golden brown. 
  • STEP 5: Serve while warm alongside a dollop of cinnamon whipped cream, and voilà—the perfect fruitcake bread pudding!

Fruitcake Parfaits

Give your parfait the perfect holiday twist by adding leftover fruitcake to the mix. Simply start by crumbling a few slices of DeLuxe® Fruitcake into a bowl. Next, gather your other parfait ingredients such as Greek yogurt and fresh berries. Then, get creative by alternating layers of crumbled fruitcake, yogurt, and berries in a glass cup or bowl. Once your layering is completed, add a dollop of whipped cream and you’re ready to serve.

Fruitcake Petits Fours

Do you have a box of leftover DeLuxe® Fruitcake Petites?—we've got a great way to enjoy them for Valentine's Day. In a microwave-safe bowl, melt your favorite chocolate wafers. We prefer Wilton's Candy Melts in pink. Once melted, proceed to dunk each Petite until thoroughly coated. Place each covered Petite on a wire cooling rack to allow the melted chocolate to harden. While hardening, use this time to decorate each Petite. We recommend red maraschino cherries, Conversation Hearts, and pink and white sprinkles.

  • STEP 1: Slice leftover fruitcake into 1-inch thick slices—dip each slice into a mixture of beaten eggs and milk
  • STEP 2: Place coated fruitcake sliced in a skillet over medium heat flipping until both sides are golden brown 
  • STEP 3: Served each slice with your choice of freshly cut fruit, whipped cream, or maple syrup.

Fruitcake Cake Pops

Looking to get the little ones interested in baking? Try this recipe for Fruitcake Cake Pops! Super easy to make and save for little hands, your kiddos will enjoy helping you whip together these simple treats. Here's how to make our DeLuxe® Fruitcake Cake Pops:

  • STEP 1: Crumble all your leftover DeLuxe® Fruitcake into a bowl
  • STEP 2: In equal parts fruitcake to vanilla frosting, combine and mix until the fruitcake is a moldable consistency.
  • STEP 3: Using a cookie scoop, mold mixture into 1-inch balls and place to the side. 
  • STEP 4: Skewer each fruitcake cake ball into a confectionary treat stick—we like Wilton's 4-Inch Treat Sticks.
  • STEP 5: In a microwave-safe bowl, melt your favorite chocolate wafers—we prefer Wilton's Candy Melts in light cocoa. Fully submerge each cake pop into the melted chocolate and place to the side to harden. Once the chocolate has hardened, you are ready to snack and enjoy!

At this time we do not have a recipe for a Steam Pudding. You can probably google it though.

This looks amazing and fairly simple to do. I have never made stuffed anything but these look simple enough to try sometime. I love how you made garlic zucchini noodles to go with the dish. That’s my favorite way to eat zucchini noodles. I use my spiralizer weekly. Definitely one of the best birthday gifts I have received. Paul Brown

What is "leftover fruit cake"....I have never heard those words used together, maybe they are talking about some "other" fruit cake, not Collin Street Fruit Cake.....
