What is Pumpkin Cake Trifle?
Made with Collin Street Bakery’s own Presidential Pastries White House Pumpkin Cake and Pecan Brittle, Pumpkin Trifle is a layered dessert sure to catch everyone’s eye. You don’t need to be a master chef to “wow” your family this Holiday season! Just take a look at this step-by-step tutorial to recreate this towering Trifle.

- 1 - Quart Heavy Cream
- 1 - Collin Street Bakery Presidential Pumpkin Cake
- 2 - Cups Collin Street Bakery Pecan Brittle (coarsely chopped)
*Save - 2 or 3 Tbsp for Garnish (optional)
- 12 oz. - Evaporated Milk, Chilled
- 15 oz. - Canned Pumpkin
- 5.1 oz - Package of Instant Vanilla Pudding and Pie Filling Mix
- 1 tsp - Cinnamon
- ½ tsp - Nutmeg
- ¼ tsp - Ginger
Whip one quart of heavy cream until soft peaks form. You will need half of the whipped cream for the Pumpkin Mousse recipe (below). The other half of the whipped cream is for garnish.
*Keep the whipped cream chilled until you are ready to use it.
The next steps will be preparing the Pumpkin Mousse.
In a large mixing bowl, mix the canned pumpkin with the vanilla pudding and pie filling mix.
Add the cinnamon, nutmeg, and ginger. Mix well.
Add the evaporated milk in four parts—1/4 of the can at a time.
Gently fold half of your whipped cream (about 2 cups) into the pumpkin pudding until fully incorporated. (Be sure to leave the rest of your whipped cream aside in a cooler for garnish)
Note: The addition of the whipped cream makes the pudding lighter and softens the pumpkin pudding flavor. For a stronger pumpkin flavor in your mousse, only incorporate one cup of whipped cream. If you really want a punch of pumpkin, stop at Step 3—the pumpkin pudding also tastes great without the whipped cream.
Now that you have prepared the Pumpkin Mousse, set it aside in a cooler until you are ready to layer it into the trifle.
Coarsely chop the Collin Street Bakery Pecan Brittle using a knife or in a food processor. Set aside.
Cut the Collin Street Bakery Presidential Pumpkin Cake into 1-inch cubes. Set aside.
Now that you have prepared all of your layer ingredients, in a large see-through trifle dish, begin layering the trifle.
Your first layer will be 4 cups of cubed Presidential Pumpkin Cake. Be sure to distribute the cubes evenly in the bottom of the dish, to ensure an even layer.
The second layer will be 1 ½ cups of pumpkin Mousse. Pour your mousse over the first layer of pumpkin cake, and smooth it out with a spatula or spoon until you have another even layer.
The third layer will be 1 cup of Pecan Brittle (chopped). Sprinkle the Pecan Brittle evenly over the previous layer of Pumpkin Mousse. Even distribution is important so that you get that Pecan Brittle crunch in every serving.
Repeat these steps again, adding more layers to your trifle. Presidential Pumpkin Cake, Pumpkin Mousse, Pecan Brittle.
Once you have 2 layers of each ingredient inside your dish, it is time to garnish the top of the cake.
Your Trifle Should Be Layered Like This:
Note: Depending on the size of your dish, you may only want three large layers and the whipped cream garnish. If you use a dish with lots of depth, you can do a few more layers in order to fill it to the top. We used a dish that is about 5 inches deep and 5.5 inches wide and holds 3.5 quarts.
TIME TO DECORATE
Top the trifle with the remaining whipped cream. Use a spatula or spoon to smooth the whipped cream out evenly.
(Optional) Use 2-3 Tbsp of chopped Pecan Brittle to garnish the top of your trifle. We used a piping bag to add more whipped cream garnish and used leftover brittle pieces as added decoration. Chill until served.
