Here at the Collin Street Bakery, we are something akin to perfectionists. Dedicated to bringing our customers the very best made in Texas products, our bakers are sticklers for serving only the freshest, most delectable baked goods ever created. That’s why when we decided to craft our newest line of Pecan Cake flavors, we took our time. It was our goal to ensure everything was just right before our cakes big debut. After several rounds of baking and much sampling, we are finally ready to reveal our creations.

Who’s Responsible For Dreaming Up These Delectable Flavor Duos?
Our brilliant head baker, Pat Bourland! As always, Pat was ecstatic to don his apron and begin baking. Inspiration struck him like a bolt of lightning when he was handed a list of potential new cake flavor combinations. Upon reading the new flavor suggestions, he thought 'Those! Those are the ones!’
“He tweaked, and tweaked, and tweaked the recipes until they were just right,” recounted Darlene Johnston, VP of Marketing. Darlene is one of the lucky few in charge of sampling new recipes to ensure they are of the highest quality. “The process of making new flavors usually takes weeks to complete. We want to make only the best tasting products.” Sounds like a lot of delicious sampling Darlene. We’re jealous!
Well, that’s enough talk about how we came up with our new flavors. Let’s talk about what you should expect!
Inspired by the fresh flavors of spring, our Strawberry Fudge Pecan Cake is both sweet and bright. Succulent, glacéed strawberries are gently folded into our rich fudge batter. Combined with native Texas pecans and mini semi-sweet chocolate chips, our cakes are baked to tender perfection. Studded with native pecans halves and strawberry chunks, this rustic looking cake is as beautiful as it is delicious.
This cake is the perfect balance of sweet and salty. Our bakers begin by folding creamy caramel bits into our signature honey batter. After gently folding in ripe pineapples, bright cherries, golden raisins, and nutty pecans, our cakes are baked till golden brown. While baking, the caramel bits melt into the batter, infusing the cake with silky caramel essence. Topped with a sprinkling of crystallized sea salt and pecan halves, this cake is like nothing you’ve ever tasted before.
If you love chocolate covered cherries, this cake is the one for you. Unlike our other Pecan Cakes, this flavor does not include our Costa Rican pineapple or golden California raisins. Instead, we’ve doubled the amount of ripe, Oregon cherries. Tenderly glacéed, these cherries are combined with a rich fudge batter flavored with premium cocoa powder. Baked low and slow, this decadently dense cake is an absolute must try.
