I ordered the New York Style Cheesecake and it arrived in just a couple of days to me in California. It was so perfectly wrapped. I refrigerated the cake when I got it because I didn't have time to work with it. I did read the little pamphlet from Collin Street Bakery on how to deal with their cheesecakes. I read that their cheesecakes are best served semi-frozen. I was a bit concerned, because I didn't want to take the time to chill it in the freezer, and I didn't want cold cheesecake.

I carefully removed the plastic that is cryovaced on the cheesecake, and then I could understand why the instructions say it's best to serve semi frozen cake. It's a very delicate cake, light and fluffy and very rich too. I was very very slow and methodical removing the plastic and I did a great job. I'm an expert in the kitchen, and I do recommend to most people that they freeze the cake or risk squashing it. But now to the review of the taste and appearance of the cheesecake. Unbelievably delicious and beautiful. Crust was delicious and their was plenty of it. The filling was soooooo good. Better than any I've ever made myself, or eaten at the finest restaurant, or purchased from another bakery. It is a beautiful tall cheesecake. Outstanding. 10/10
