It’s finally here! Our Gluten-Free Fruitcake is finally available online. We know many of you have been anxiously awaiting its arrival. So that’s why we’re SO ecstatic to announce its release.  We’ve been diligently working on our Gluten-Free Fruitcake recipe for quite a while now, tweaking it till it was juuuust right. You see, here at the bakery, we’re sticklers for quality. So, we couldn’t stand for offering anything but the best. Well, we’re proud to say, all that hard work has finally paid off. What Is Gluten?

Unless you’ve been living under a rock, you’ve probably noticed a huge uptick in the number of grocery store items advertising themselves as “gluten-free.” This includes everything from salsa, to chips, to cakes. All this publicity might have you wondering, “What exactly is gluten?’ and ‘Why is everyone making such a big fuss about it?” Well, here’s a quick answer:

Gluten is the naturally occurring protein found in wheat, rye, barley, and triticale. This protein is naturally stretchy and elastic in nature, giving bread and baked goods their shape, strength, and texture. Essentially, gluten acts as a “glue” holding the structure of food together. Removing gluten from various foods means individuals suffering from celiac disease can enjoy these foods without adverse reactions. However, not all individuals who prefer gluten-free foods suffer from celiac disease.

What Is Celiac Disease?

Okay, now that we’ve tackled the question ‘What is gluten?’, you might have a follow-up question, ‘What is celiac disease?’ --Here’s another brief explanation:

"Celiac disease is a serious autoimmune disease that occurs in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide. Two and one-half million Americans are undiagnosed and are at risk for long-term health complications.
When people with celiac disease eat gluten (a protein found in wheat, rye, and barley), their body mounts an immune response that attacks the small intestine. These attacks lead to damage on the villi, small fingerlike projections that line the small intestine, that promote nutrient absorption. When the villi get damaged, nutrients cannot be absorbed properly into the body."

How Do We Make Our Gluten-Free Fruitcake?

Our Gluten-Free Fruitcake recipe is made using a method very similar to our DeLuxe® Fruitcake recipe. However, we have removed the gluten-based ingredients traditionally found in our DeLuxe® and replaced them with gluten-free alternatives. For example, instead of using traditional wheat flour, our Gluten-Free Fruitcake is created using rice-based flour.

What Does Our Gluten-Free Cake Taste Like?

Our Gluten-Free Fruitcake tastes very much like our DeLuxe® Fruitcake, however, the texture is slightly different. Because gluten is a binding agent used to help hold ingredients together, the removal of gluten from our fruitcake causes our cakes to have a more delicate texture. Therefore, to help, our Gluten-Free Fruitcake only comes pre-sliced.

Are These Cakes Made In A Gluten-Free Facility?

Now, if you have a serious medical condition in which you are not allowed to come in contact with ANY gluten, we would advise using caution when enjoying our Gluten-Free Fruitcake. Our facility is NOT gluten-free. We process every major food allergen with the exception of fish and shellfish. However, our lab-certified Gluten-Free Fruitcake IS produced using a very strict production procedure and follows an extremely rigid sanitation process aimed at preventing potential cross-contamination.

Our Gluten-Free Fruitcake has been certified by an independent third-party lab and has passed all standards meeting national requirements for being labeled “gluten-free.”
